What’s better than an ice cold refreshment during these hot summer days? And if it is so sweet and pretty, I couldn’t be happier :-)
That’s why I love to share this icy deliciousness with you!
You’ll need only 3 ingredients to make about 6 popsicles:
- 200 g berries (I took my favourites, blueberries)
- 200 g yogurt (in my case coconut yogurt)
- Maple syrup (or honey, agave syrup, etc. to taste)
To get the nice colour gradient, the ice-cream is made in three steps.
First you mix 2/3 of the yogurt with 1/3 of the berries and sweeten it with maple syrup (according to taste). This mass fills about 1/3 of the ice mold. Now put the molds in the freezer for about 30 minutes.
In the second step (the mass is now stronger in color) mix the remaining yogurt and half of the remaining fruit. Also sweet as needed and fill the second third of your molds and put them back into the freezer for about 15 minutes.
Last step is to mix the remaining berries with some maple syrup and fill the last third of the molds. Finally put the sticks in the molds and put into the freezer for at least 3 hours. Done.
Now you just need to decide whether you eat all at once, invite five friends, or munch one popsicle a day for the next 6 days. I love all three alternatives ;-)
