Teff is Ethiopian millet and is biologically a gras.
It is not so well known in Germany yet, but available at many health food stores. The taste is strong, nutty and somewhat sweet, but definitely delicious!
Teff is a very valuable, healthy food, because it contains:
- no gluten
- the highest levels of calcium, potassium, iron, and zinc
- valuable unsaturated fatty acids, amino acids and vitamins
- many complex carbs (and thus a low glycemic index), thereby reducing blood sugar levels fast not as fast in the air. So you are fit and saturated for a long time.
