Arugula (or rocket) has been „rediscovered“ only a few years ago and is available almost all year.
It contains:
- Many vitamins and minerals (vitamins A, C, folic acid, potassium, calcium and iron)
- Mustard oils (secondary plant substances) that are antioxidant and act against cancer
- Bitter substances that kill bacteria and boost the immune system
Be careful:
Arugula is very healthy in itself, but takes up nitrate from the soil, which can be unhealthy in large quantities. Therefore it should not be consumed in large amounts every day. Opengroundplants in summer are preferred because sunlight promotes the reduction of nitrate. You can also reduce the nitrate content by buying organic arugula, removing the stems, washing the leaves and eating it together with vitamin C-containing foods, since this reduces the conversion of nitrate to the harmful nitrite.
When you follow the above mentioned rules, arugula is a super healthy, safe food, that spices up many dishes with its characteristic flavor!
